Excellent al-dente texture, strong enough to toss, delicious taste.
Delicious. Perfect texture, I'm so surprised because most gluten-free noodles do not have a brilliant texture, they break apart, and don't really hold up to stirring in other ingredients after they're made. I ordered the Buckwheat sweet potato noodle because a recipe for cold peanut sesame noodles gluten free raved about the noodles. I was super careful to taste them for al dente texture about every 30 seconds while boiling them. Heads up: mine were done in about 3 minutes. I tossed them vigorously with chopped napa cabbage, red pepper slices, scallions, black sesame seeds, rice vinegar, peanut butter, tahini, tamari, fresh garlic, fresh ginger and a dash of sriracha. Unbelievably great. Enjoy!

Delicious gluten and allergen free noodles
These are a fabulous option if you are gluten-free, and trying to avoid soy, corn, rice and other grains/legumes usually used to make gluten-free pastas. These hold together better than traditional soba noodles, probably due to the inclusion of the small amount of sweet potato starch, and are very tasty and "noodley" if you've been missing pasta/noodles. Don't expect them to be a one-on-one substitute for spaghetti or egg noodles, but for application in Asian dishes, noodle salads or even under a sauce, I think they'll be great. We had them in homemade chicken soup for our first experiment, and enjoyed them very much. I can't wait to make some other dishes with them.

Best gluten free noodles I’ve had!
Let me start by saying this is the best gluten free NOODLE I’ve had hands down. It’s so close to actual wheat noodles that most people wouldn’t be able to tell the difference! As someone who is Japanese, I’ve had a lot of soba in my life and for those of you wanting a real soba experience, then this might not hit the mark. It doesn’t taste like soba to me nor does the texture match soba. It’s much closer to a chewy somen. That said this noodle is still absolutely delicious and I recommend it to anyone!

Yummy!
I was looking for buckwheat soba and found these noodles, which I like even better! The sweet potato mellows the buckwheat flavor just enough, and I love that they are organic and have exactly 2 ingredients: buckwheat & sweet potato. I like to eat them with canned salmon and broccoli (and butter)--weird combo, I know, but so delicious. I'll be buying these on a regular basis.

Great gluten-free soba.
Very high quality with great flavor. The packaging was great in that the noodles weren't broken when it arrived. It's not easy finding gluten free soba, but this is good.

YUMMMMMM ...
I just ordered three packages of these noodles. My biggest complaint is they are so delicious I'm gonna run out fast! As someone who does not eat grains of any kind, these are delicious, beautifully textured, lovely noodles. So happy to discover a grain-free noodle that isn't just tolerable; it's excellent.

GREAT noodles!
Great noodles! Here's a trick though, do not let them sit for very long after draining. They will clump and stick and form one helluva mess.

Guilt-free Soba Noodles
Great packaging, great product, and I've looked for and tried other sobas... most of them contain wheat as first ingredient.

Excellent substitute for wheat noodles
Delivered very quick and in perfect condition. During cooking noodles the smell of buckwheat is slightly overpowering but once noodles are drained and seasoned they are perfect. They absorb the spices very well. They have amazing texture. They don’t stick together. I am really pleased with them. They do have slightly nutty taste to them without seasoning.

Tasty buckwheat noodles
Love the taste of these noodles, the sweet potato adds to the flavour. We break them into three before cooking and add a little oil to the cooking water and then stir often, otherwise they stick together into a mass. Delicious with chopped veg and salad ingredients and dressed with a little olive oil.

Tasty
A bit expensive but great gluten free pasta alternative. Very quick to cook ... the key is to boil in plenty of water and after draining immediately cover in cold water to prevent it from sticking. Then reheat when ready to eat.

Cook in lots of water, rinse in cold!
If you follow the instructions these are great: (I even cooked them in the microwave -stirring vigorously to seperate with a fork every 2 mins). Rinsing in cold water and a spot of sesame or olive oil keeps them separate for inclusion in stir fry or saladdishes. V tasty!

Great tasting if a little expensive
Really like these noodles. I detest spaghetti, have refused to eat it for years as i abhore the texture and when i saw these i though ooooo might give them a go.They are lovely, each pack is separated into 3 individual portions and when cooking they will stick together in lumps, ive figured out by adding a drop of olive oil, they dont stick together. Also they look very grey when cooking and its a bit off putting but once cooked they are delicious.Once drained rinse them in cold water.I had some just last night with pork and hoi sin sauce.Yummy..
