Excellent al-dente texture, strong enough to toss, delicious taste.
Delicious. Perfect texture, I'm so surprised because most gluten-free noodles do not have a brilliant texture, they break apart, and don't really hold up to stirring in other ingredients after they're made. I ordered the Buckwheat sweet potato noodle because a recipe for cold peanut sesame noodles gluten free raved about the noodles. I was super careful to taste them for al dente texture about every 30 seconds while boiling them. Heads up: mine were done in about 3 minutes. I tossed them vigorously with chopped napa cabbage, red pepper slices, scallions, black sesame seeds, rice vinegar, peanut butter, tahini, tamari, fresh garlic, fresh ginger and a dash of sriracha. Unbelievably great. Enjoy!

GREAT noodles!
Great noodles! Here's a trick though, do not let them sit for very long after draining. They will clump and stick and form one helluva mess.

Delicious gluten and allergen free noodles
These are a fabulous option if you are gluten-free, and trying to avoid soy, corn, rice and other grains/legumes usually used to make gluten-free pastas. These hold together better than traditional soba noodles, probably due to the inclusion of the small amount of sweet potato starch, and are very tasty and "noodley" if you've been missing pasta/noodles. Don't expect them to be a one-on-one substitute for spaghetti or egg noodles, but for application in Asian dishes, noodle salads or even under a sauce, I think they'll be great. We had them in homemade chicken soup for our first experiment, and enjoyed them very much. I can't wait to make some other dishes with them.

Good but poorly labeled- bad cooking experience
I wish there was some warning that they have individually tied the noodles into 4 or 5 logs! It was a hard lesson to learn, idk if all soba noodles come this way but i had my water boiling and just cut the package and dumped them in like i do with all other noodles, not knowing they were all individually tied into like four rolls. Just heads up to anyone- they will completely fuse together in the water if you dont know about or remember this step, i ended up having to throw out the majority of them because they became these huge goopy noodle logs because i didnt remove the tape holding the rolls together in the package 🤦♀️🤦♀️🤦♀️. I was super frustrated about that, but the ones i salvaged tasted great and texture is yummy and holds together well, great alternative for health conscious GF cooks. (I like that they reheat with liquid well if they are cooked and refridgerated)

I used these in an Asian-style noodle salad and they were fantastic. My only complaint is that they stuck together quite a bit when I was cooking so I'll add just a touch more oil to the water next time and be sure I stir them frequently. Sounds like others have complained about the flavor - I thought they were delicious, but I also put them in a dish that had a lot of flavor - ginger, garlic, cilantro, lime. Yum.

Love these noodles.
Love these noodles. They don't contain white flour as some others do. The texture is wonderful with just enough bite and they are reasonable priced. HOWEVER, what I received was 100% buckwheat. No sweet potato was either in the description on what I received OR in the ingredients list. That's fine with me. But it needs to be corrected

Big "nope" from me
This product cannot be called soba. You cannot use this product to make zaru soba or numerous other classics because these noodles are INCREDIBLY sticky and slimy. The only thing they work for is soup, where you have a liquid to keep them suspended and basically separated. They taste bad too - nothing like soba; a little like wood. All this, plus the packaging doesn't allow for easy storage because it doesn't have a reseal zipper nor enough room to fold over the top and tape it closed. Unless you cook all three noodle bundles in the pack together, you'll need to store the leftover bundle(s) in a new bag.

Yam noodles lacked flavor
Love buckwheat noodles, especially chilled in hot months for a refreshing lunch with a chopped green onion on top with a dash of soyou sauce(a dash, you do not need much) That said, this yam type is a bit slimy, not much yam taste, did make several batches, will not buy this type again. But will keep using the regular buckwheat noodles. Japanese made, comes in neat wrapped portions;both types.

Excellent substitute for wheat noodles
Delivered very quick and in perfect condition. During cooking noodles the smell of buckwheat is slightly overpowering but once noodles are drained and seasoned they are perfect. They absorb the spices very well. They have amazing texture. They don’t stick together. I am really pleased with them. They do have slightly nutty taste to them without seasoning.

Worse noodles ever
These stick together after cooking, so instead of noodles, you get a cake of gooey noodles. Inedible.
