Fresh and Sweet
5 stars for this cashew flour. Fresh and sweet tasting and a nice fine grind. I will be using in baking, to make cashew cream, and for vegan ricotta. 2 stars for the packaging. Bag inside cardboard carton was sliced open resulting in some spillage.

Too expensive, not as tasty as I thought it would be
I have to say, for $20 for such a small amount of pumpkin flour, I expected this to taste better than it does. Not impressed at all. I've kept it because I did use some, but I found the flour requires considerable baking time or it doesn't cook all the way through (I used some for muffins). Also, I didn't quite like the texture. Maybe if you were to combine it with wheat flour it might have a better texture, but the whole reason I purchased this was that I'm trying not to use any wheat flour in my baking. So, just bear all of this in mind if you should decide to purchase.

Didn't work for me.
My wife likes pumpkin pancakes. It is hard to find good pumpkin mixes so I thought I would just use this to flavor our current mix that is 50% Klondike Pancake mix and 50% Carb Quick. The first issue I had was that when cooking the mix with 25% of this pumpkin flour was that it would never firm up. It was a gooey mess no matter how long I cooked it. They are not edible. So I cut that amount in Half. I still had the same problem. Then I tried a mix with 1 Tbl of the pumpkin flour to our standard mix. This firmed up but had no pumpkin flavor. So I tried 2 Tbl's. This firmed up but was borderline gooey. Still no flavor. I threw the rest of this pumpkin flour in the trash. I will be looking for another brand.
